Why this recipe works

Three components, no cooking and about three minutes: this exists to close the gap between lunch and training without derailing the day's numbers. Cottage cheese does the protein work, the apple keeps it fresh and the almonds add the fat and crunch that make it feel like a plate rather than a stopgap. Also the cheapest way in the library to add protein between meals.

Prep, storage & reheating

  • Slice the apple last so it stays crisp and does not brown while the rest is on the plate.
  • Season the cottage cheese with a pinch of salt or pepper — plain, it tastes flat next to the sweetness of the apple.

No cooking is involved and reheating does not apply. Keep the cottage cheese refrigerated in its covered container until you eat, and cut the apple only at the point of serving. The almonds are fine stored dry at room temperature.

Prepping this for the week

Scaling one serving into several days is a planning problem: protein per portion, cost per week and the time you have to cook in one block.
